

Avocado Toast
Ingredients:
- Avocado (1 medium)
- 1-2 slices of bread (to toast)
- Half a lemon
- Salt/pepper
- Chilly flakes
-Butter (vegan if preferred)
- Olive oil (1 tbsp- for eggs)
- Tomatoes (optional topping)
- Feta cheese (optional topping)
- Eggs (optional topping)
Toppings (optional):
- Can be topped with sunny eggs or sliced cherry tomatoes and fetta cheese
- To make sunny side up eggs heat a pan with a drizzle of olive oil on medium heat. When the oil is warmed up add in your egg(s) and cover with a lid to cook the top. Once no raw parts are left or until the bottom of the egg begins to turn lightly brown, remove the pan from the heat and place it on the toast.
Steps:
1. Take your bread slices and toast them in a pan on medium heat, lightly covered in butter until golden brown making sure both sides are a light brown. You can toast your bread in a toaster if you would like it simplified.
2. Once toast is done place it on a plate and set aside
3. Take your avocado and cut it in half
4. Remove the seed in the center then with a spoon scoop the avocado out into a bowl.
5. Add a squeez of lemon, 1/4 tbsp of salt, a pinch of pepper and some chilly flakes. Note: the seasoning can be adjusted based on preference, you may taste it and see what you would like more or less of.
6. Mash the avocado in the bowl using a fork until a puree like texture
7. Spread the avocado on your toast(s)


Green Smoothie
Ingredients:
-Spinach (three hand fulls)
- One banana
- One hand full of chopped up mango
- Once small piece of ginger
- Lemon
- Oat milk
- Hempseeds
- Maca powder (optional)
- Spirulina (optional)
-->the powders is additional nutrition and flavor, if you do not have these at home you do not need to use them :-)
Seps:
1. In a blender add in : 3 handfuls of spinach, one banana, a pealed piece of ginger, half a lemon, a hand full of chopped up mango, 1 tbsp of spirulina and maca powder, and a few splashes of oat milk
2. Blend everything together
3. Pour the smoothie in a glass and top with some hemp seeds

Ingredients:
-Blueberries ( 2 large hand-fulls)
-Oat milk or any milk of choice (1 cup)
- Oats (1/2 cup)
- Earl grey tea (1 tea bag)
- Chia seeds (to top it off- optional)
- Honey (optional)
- Cinnamon
- Lemon
Steps:
1. To a pot add in 1 cup of oat milk and turn the heat to high to boil it.
2. To the milk add the lemon juice and honey, when the milk has boiled add the tea bag and simmer for 3 minutes on medium heat.
3. Remove the tea bag and add the oats and blueberries and mix.
4. Cook until oats have absorbed the milk and the oats have thickened. If needed, add more oats, if mixture is too liquidy after 5 minutes.
5. Serve with blueberries and chia seeds, or whatever else you desire and enjoy while warm.
Earl Grey Blueberry Oatmeal

Raspberry-Mandarin Oatmeal
Ingredients:
- 2 Mandarins
- 1 hand full of raspberries
- 1/2 cup of oats
- One cup of milk of choice (I used oat milk)
- Honey
- Almond butter (optional)
- Goji berries
- Hemp seeds
-cinnamon
-vanilla extract
Steps:
1. In a pot boil on medium heat milk until warm and add 1tsp of honey, some cinnamon/nutmeg (optional), and 1/4 tsp of vanilla extract.
2. Add in your oats and mix
3. Peal one of the two mandarins and squeez the juice using your hands into the oats.
4. Stir until thickened (this should take up to 3-6 minutes)
5. Add into a bowl
6. Top off with a hand full of raspberries, mandarin pieces, hemp seeds, goji berries and almond butter.
Super food berry smoothie bowl
Steps:
1. In a blender blend in the 1 banana, a hand full of each type of berry, your powders of choice, a splash of your plant milk of choice (for a thicker consistency, you can add more if preferred), and a tablespoon of chia and hemp seeds.
2. Once blended, pour into a cup and drink as it is or you can pour the smoothie into a bowl where you can add your toppings of choice.
Ingredients:
FOR THE SMOOTHIE:
-raspberries (1 hand full)
- blackberries (1 hand full)
- blueberries (1 hand full)
- banana x1
- acai powder or forever beautiful mix from the brand: "your superfoods", you can use any other powders such as clean protein powder, MACA powder, Moringa powder, etc.
- A plant based milk (I used oat milk)
- chia seeds and hemp seeds (you can use other seeds as well).
FOR THE TOPPINGS:
- granola (homemade or store-bought)
- coconut flakes
- goji berries
- almond butter



Chia seed pudding parfait with caramelized apple and cinnamon
Ingredients:
-3 tbsp. of chia seeds
- Plant milk of choice (1/2 cup-I used oat milk)
- 1/4 tbsp. of vanilla extract
- Cinnamon
- Nutmeg
- Honey (1 tbsp.)
- 1 apple
-sunflower seeds
- pecan nuts
- granola
- coconut oil (1 tbsp.)
Steps:
1. In a jar or glass, mix in your chia seeds, milk, honey, vanilla extract, cinnamon, and nutmeg and leave in the fridge overnight or for a minimum of 4 hours.
2. Head up a pan with 1 tbsp. of coconut oil and add one small to medium apple cut into cubes along with some honey and cinnamon. Cook until softened
3. Add your chia seed pudding in a bowl along with the cooked apple, sunflower seeds, pecan nuts and granola.
Blueberry matcha pancakes
Ingredients:
-1 medium to large ripe banana
- 1 egg
- 1/2 cup of oat flour
- 1/2 cup of blueberries for the batter and a hand full for the topping
- A pinch of salt
- Baking powder
- A pinch of cinnamon
- Honey
- Matcha powder- 3-4 tbsp.
- Mint to top off (optional)
Steps:
1. In a blender, mix in the banana, egg, cinnamon, salt, baking powder, matcha and oat flour until smooth
2. To the batter add in your blueberries and mix.
3. Heat a pan with a little but of olive or coconut oil and add in 1 to 2 table spoons of batter. Cook each side for 3-5 minutes, you know when their ready to flip once you see some bubbles forming on the top of the pancake. Do this until all the batter is used up.
4. In a pan cook the hand full of blueberries with a table spoon of honey until soft, this should take 1-2 minutes.
5. Serve with a mint for extra flavor (optional)
